Hotel Des Indes The Hague introduces Roel Gilissen as the hotel’s new Executive Chef from the 1st of February. He brings over 21 years of professional experience from various prestigious restaurants such as the ‘De Hoefslag’ in Bosch en Duin, which was awarded with a Michelin star. Over his 21 year long career as head cook he has created his own signature dishes. Dishes such as the special truffle risotto with fried foie gras and bacon cake, topped with chocolate sauce.
Roel will use his extensive experience to relaunch our fine dining – and Des Indes Lounge menu. He will make use of special herbs that will reflect on the Indonesian roots of Hotel Des Indes with a modern twist. Roel has a great ambition as a chef and therefore focuses on development in 2017. Given his desire for new influences and flavors, he will collaborate with fellow chefs from local restaurants such as the ‘Bridges’ later this year.
